What Do You Eat?

For two years I ate two steaks a day, and I’m a big fan of ribeye. I recommend befriending a butcher who can help provide you with your fresh meat. I would ask your local butcher to make you lamb, beef, fat and salt sausages in lamb casings. These are delicious. It’s also cheap compared to steaks. I dehydrate round roast and cover it in salt to make jerky weekly. Then for a few years I ate only lamb and veal when I was living in moldy houses and my histamine intolerance was crazy. Now I’m back to two steaks a day or about two pounds of ground beef.

  1. I’ve had a similar experience with aged meat; the less-aged the better I do. Probably why you typically do better with lamb than beef; it’s often aged less long.
