Simple Slow-Cooker Beef Stew

This is the lowest-effort recipe on the site. Throw everything in a slow cooker before bed, set it on high (or low with a timer that switches to "warm" in the morning), and you have hot food ready when you wake up. Sweet potato and parsnips reintroduce nicely once you have stabilized on the Lion Diet, so this works either as a reintroduction dish or just as a no-cook-required meal on a busy week. If you don't have a slow cooker, buy one with a timer — it's worth the extra $15 to be able to set it overnight.
- 2 lbs beef roast, lower-quality steak cuts, or ground beef
- 1–2 cups chicken broth (or water)
- 2 sweet potatoes, peeled and chopped into 1-inch pieces
- 2 parsnips, peeled and chopped into 1-inch pieces
- Salt and pepper, to taste
- Turmeric, to taste
- Add the beef to the slow cooker.
- Pour in the chicken broth (or water).
- Add the chopped sweet potatoes and parsnips.
- Season with salt, pepper, and turmeric.
- Set the slow cooker to high and cook for at least 6–8 hours, or overnight on low.
- If your slow cooker has a timer, set it to switch to "warm" in the morning so food is ready when you wake up.
- Stir, salt and pepper to taste, and serve.
